Thalassitis Submerged is one of Greece’s most unique and rare wines, created by Gaia Wines in Santorini (PDO Santorini). It is a dry white wine produced from 100% Assyrtiko grapes that, instead of aging in a cellar, is submerged at a depth of 20-25 meters in the sea of Santorini for at least 4-5 years. This process provides a unique aging environment with stable temperatures, total darkness and a complete lack of oxygen, preventing oxidation. The high-pressure conditions allow the wine to evolve in a way that is impossible on land. Due to the harsh conditions, some bottles break or are lost, making production extremely limited.

  • Appearance: Bright gold and youthful, misleading regarding its actual age, as the lack of oxygen prevents oxidation.
  • Aromas: Intense notes of wet stone, flint and a characteristic sea breeze (iodine). Due to aging, it develops petrol aromas (similar to aged Riesling), along with notes of nuts, smoke and honey. You can also detect ripe citrus, white-fleshed fruits, dried herbs and a hint of salinity (caper).
  • Palate: Combines a full body with the signature sharp acidity of Assyrtiko. It remains impressively vibrant with dominant flavors of sea salt, ripe citrus and deep minerality. The finish is exceptionally long.
  • Aging Potential: It can evolve for another 5 to 10 years under proper storage. Decanting for 30-60 minutes is essential, as the wine is "closed" due to the extreme reductive environment of the seabed.

It pairs ideally with large grilled fish dishes (white grouper, red porgy, or dusky grouper with simple lemon-oil dressing), shellfish & seafood (grilled lobster, lobster pasta, langoustines, oysters and clams), dishes with smoked flavors (smoked eel, salmon, or even smoked Metsovone cheese) and gourmet dishes (bottarga, fricassee with greens, or chicken in white lemon sauce with capers). Best served at 12°C - 14°C.
